White wine is the champion of freshness and versatility. How do you make white wine?
The basis of white wine is simple: white or red grapes vinified without their skins. Why? Because it's the pigments in the skins that color the wine, so separating them from the juice produces lighter wines. The winemaking technique greatly influences the final style:
